Nutrition science is both fascinating and flawed. The “rules” we still lean on today—like how we count calories—trace back to Wilbur Atwater’s experiments in the 1890s. Groundbreaking for its time, but crude by today’s standards. Two foods with the same calories on paper can have entirely different effects in your body. That’s the reality.
Research itself isn’t perfect either. Much of what makes headlines comes from food frequency questionnaires—asking people to remember what they ate last week, last month, or even last year. Useful at scale, but hardly precision science. Add in the fact that industries often fund and frame studies to protect their own interests, and you get the messy, cherry-picked “proof” that props up most nutrition marketing.
